Easy Cooking: Top 3 Seafood Recipes

Although it would be ideal to pick up fresh fish from the seafood market a couple of times a week, for many of us, we just don't have time. The convenience of buying frozen fish at the supermarket is handy, as it doesn't take too long to defrost on a busy weeknight, and the results are still delicious. These are recipes that our family love to make using frozen seafood. Why don't you try one this weekend?

1/ Cauliflower Fish Chowder

Ingredients:** 500ml chicken stock (salt reduced), 125g can drained corn (salt reduced), 4 portions of frozen Barramundi portions (defrosted and chopped), 1 cup water, 1 onion (diced), 1 garlic clove (crushed), 1 stick of celery (finely chopped), 1 carrot (chopped), 1/2 cauliflower (chopped), 2 large potatoes (chopped) and 4 Tablespoons fresh parsley, chopped.%%

Heat oil in a large saucepan and sauté garlic, onion, celery and carrot until soft. Add cauliflower, potato, stock and water. Bring to boil and cook for 7 minutes. Add corn kernels. Remove from heat and blend with a stick blender until smooth. Put the pot back on the heat, add fish, put the lid on the pot and simmer for 5 minutes or until cooked. Ladle and serve with fresh parsley and cracked pepper. Note: Don't omit the parsley - it is a large part of the overall flavour.



2/ Spicy Fish Tacos

Ingredients: 4 frozen Basa fillets (defrosted and diced), 3 Tablespoons olive oil, 1 teaspoon lime juice, 1 teaspoon smoked paprika, 1/2 teaspoon cumin, 1/2 teaspoon chilli powder, 1/4 teaspoon cayenne pepper, soft tacos and taco toppings.

Marinate the Basa fillets in the oil, lime juice, paprika, cumin, chilli powder and cayenne pepper for 2 hours prior to cooking. The longer your marinate it, the spicier the fish will be. Cook in a fry pan for 5 minutes until cooked through. Serve in soft tacos with lettuce, diced tomato, grated cheese and guacamole.

3/ Garlic Prawn Pizza

Ingredients: 200g frozen green prawns (defrosted), 2 Tablespoons basil pesto, 1 Tablespoon crushed garlic, 1 large pizza base and a scattering of mozzarella.

Preheat oven to 200 degrees. Add oil to a fry pan and cook garlic and prawns until cooked through and they turn orange. Scatter mozzarella on the pizza base. Arrange prawns on top and drop 1/2 teaspoon of pesto in spots all around the pizza. Cook for 10 - 15 minutes.

These recipes are easy for a weeknight and don't take too long to make. With some preparation, you can have dinner on the table in half an hour - you have to love that!
