Do you use chicken mince a lot in your cooking? It isn't an ingredient that our family uses often, however, we use it in a handful of easy recipes where only chicken mince can be used. Although you could substitute it with pork mince, chicken mince has a milder flavour which takes on the herbs and spices that you add to it, making it a versatile mince to use. It is also lower in fat than many other mince varieties, so you can feel better knowing that it is healthier!

These easy, budget-friendly recipes include something for every member of the family. Which one will you try this weekend?



**Chicken Koftas

Ingredients:** 500g chicken mince, 1 brown onion (finely chopped), 3/4 cup homemade breadcrumbs (see the recipe for chicken parmigiana, above), 1/2 cup fresh coriander (chopped), 2 cloves garlic (finely chopped), 2 teaspoons cumin, 2 teaspoons ground coriander.

Soak bamboo skewers in water for 10 minutes. Combine ingredients in a medium bowl using your hands. Form the mince around the skewers, so they look like a sausage on a stick. BBQ for 15 minutes, turning regularly.



Spicy Chicken Balls

Ingredients: 500g chicken mince, 1 egg, 35g packet of mild taco seasoning (salt reduced) and 1/3 cup breadcrumbs, plus extra for rolling.

Combine all the ingredients in a bowl. Roll into balls and extra breadcrumbs. Add olive oil to a fry pan and cook until white in the centre and browned on the outside. Serve with tomato sauce. This recipe can also make burger patties.



Chicken Sausage Rolls

Ingredients: 500g chicken mince, 1 cup breadcrumbs, 1 egg, 1 carrot (grated), 4 spring onions (sliced thinly), 1/4 cup coriander leaves (chopped), 1/4 cup parsley leaves (chopped), 4 sheets frozen puff pastry (defrosted), an extra egg (for egg wash), cracked pepper.

Preheat oven to 200 degrees. Line two baking trays with baking paper. In a bowl, combine the chicken mince, breadcrumbs, egg, coriander, parsley, carrot and spring onions. Add cracked pepper to taste - don't omit the pepper, it provides a lot of flavour. Cut a puff pastry sheet in half. Spoon out 1/8 of the mixture and place it in a sausage shape along one of the longer edges. Tuck the pastry over the meat and roll the sausage roll-up. At the other end, dip your fingers in the egg wash and run it along the other long edge to seal. Place the sausage roll on the baking tray, seal side down. Cut into 3 - 6 pieces. Repeat for all the rolls. Rub remaining egg wash over the top of the sausage rolls. Bake for 25 - 35 minutes until golden on top.



Chicken Pies For Kids

Ingredients: 500g chicken mince, 3 carrots (peeled and grated), 2 potatoes (peeled and chopped into 1cm cubes), 1 onion (finely chopped), 1.25 cups chicken stock (split into 3/4 cup and 1/2 cup), 1 cup frozen peas, 4 sheets puff pastry (defrosted), 1/4 cup plain flour, 1 teaspoon Moroccan Seasoning.

In a large saucepan, add the chicken, carrot, potato, onion, seasoning and 3/4 cup of chicken stock. Break the chicken mince up with a wooden spoon. Bring to the boil and simmer and stir for 10 minutes. Add peas and cracked pepper to taste, and stir for 1 minute. In a small bowl, mix the flour and 1/2 cup chicken stock and pour into the saucepan, stirring. Simmer for a few minutes until the mixture thickens.

Preheat oven to 200 degrees, fan forced, and prepare the oven tray with four small ramekins or pie dishes. Spoon mixture into each one then top with a square of puff pastry, pressing down on the edges. Pierce two holes in the top of each one. Cook for 10 - 15 minutes, or until the pastry has browned. With the leftover puff pastry, cut out shapes using cookie cutters and bake for 5 minutes with the pie. Kids love them!
