If you love carrot cake, then you will enjoy making this easy, nut-free carrot cake recipe for guests who come over, the kids or the whole family. My family has been making this carrot cake recipe for years, after we had some at a family gathering and asked my Aunty for the recipe. She was happy to share her recipe - even though it meant we knew her secret of how easy it was to make!
In my opinion, the best recipes are the easiest ones - with as little ingredients as possible. Who wants to search all around the supermarket looking for strange ingredients that we will never use again? This recipe uses ingredients that you may already have in your home, right now. It is the perfect family favourite to try this weekend...
1/ Preheat oven to 180 degrees, fan-forced. Cream together oil and sugar. Add eggs one at a time, mixing well after each one.
2/ Add flour and then mix. Stir through the sultanas.
3/ Stir through the mixed spice and grated carrot. Mix until well combined.
4/ Pour into a lined cake tin and bake for 30 - 35 minutes. Place a knife in the centre of the cake and if it comes out mostly clean, allow to cool on a cake rack. This cake is moist, due to the carrots, eggs and oil, so your knife won't be completely dry.

5/ In a small bowl, combine the cream cheese, icing sugar and vanilla essence. Smear over the top of the cooled cake. (This icing is so good, you and the kids will want to lick the bowl!)
