An easy recipe you can bake in 20 minutes

If you are looking for an easy recipe that doesn't take long to bake, then you have come to the right place! This recipe is loved by all ages - just watch them disappear!


2/3 cup olive oil
3/4 cup raw sugar
2 eggs
1 cup self-raising flour
1 teaspoon mixed spice
1 large carrot, grated


3 Tablespoons cream cheese
2 Tablespoons icing sugar
1/2 teaspoon vanilla essence
Walnut pieces for decoration

Don't skimp on the cream cheese icing!

How To Make It:

Preheat oven to 180 degrees, fan-forced. Spray a muffin tin with oil spray.
In a large bowl, combine the olive oil and sugar.
Add the eggs one at a time and stir after each one.
Add the flour and mixed spice and combine.
Fold in the grated carrot.
Spoon the mixture into the muffin tin and bake for approximately 20 minutes. Test the centre with a knife to ensure it has cooked in the centre. When ready, allow to cool in the tray.
For the icing, combine the ingredients and add a dollop to the top of each muffin. Add a walnut piece on each one for decoration.
