Easy 5 Cup Coconut Cake Recipe

There are times when you need to pop out to the shops and buy a cake for when guests come over, for a special afternoon tea or if the family wants something sweet for dessert. The local supermarket has a wide range of delicious choices, however, we often have all the ingredients we need in the pantry to make a cake at home - if you have the time.

This 5 cup recipe is as easy as it sounds, and it is ready in less than an hour. The best part, I think, is that the last cup can be whatever you happen to have in the pantry at the time. I usually make this recipe with sultanas, however, you can add mixed dried fruit or chopped dates or experiment with other flavours, and create a new recipe every time. All you need to do is combine 5 cups and follow 5 easy steps...



Ingredients:

**1 cup self-raising flour
1 cup sugar
1 cup desiccated coconut
1 cup milk
1 cup sultanas/ mixed dried fruit/ chopped dates - your choice!

What To Do:

Step 1: Preheat oven to 180 degrees, fan-forced.

Step 2: In a medium bowl, combine the flour, sugar and coconut.

Step 3: Add the milk and stir.

Step 4: Stir through the last cup of ingredients and pour into a lined cake tin.

Step 5: Bake for 35 minutes until cooked through. Allow to cool and add icing with a sprinkle of coconut and fresh fruit, if desired.

This recipe is a handy one to keep in mind, anytime you need a cake at short notice. Get creative and experiment with tinned fruits, frozen berries or your favourite ingredients, for that last cup in the recipe. I told you it was easy!
