The reason why Dolcini Catering's stall looks like there's not a lot there is because I discovered them on the way out, close to market closing time. A quick rushed bite of their Blondie Brownies told me that I had uncovered something special here. See the wooden paddle that's empty in front of them at the stall (in the picture above)? It's because I bought out the last 8 Blondie Brownies they had.
It was just perfection on my palate and I just had to have them, of course. They were moist and rich without being sugary sweet. They were also very moreish.
Having worked as a qualified pastry chef, Cynthia is at the helm of producing these delicious bites from scratch. No frozen or pre-mix products are used at their off-site kitchen. From a very young age (let's face it, she still is), Cynthia knew what she wanted and went out to achieve it. She decided she wanted to go to London and work with Jamie Oliver no less. Lo and behold, she did!
She worked in London for 17 months, 15 of it at Jamie Oliver's Barbecoa. This determination to succeed and produce the best runs through her veins and I believe transcends into her array of pastries on offer.
Sister Rachel left her retail background and brought her artistry to the business. She's responsible for the graphic design on the business cards, the logo and so on. From what I can see, it looks like youngest sister Liana is in training as well.
