It's nearly the end of the month. Is your food budget stretched to its limit? Time to get creative with a few food items which are cheap and cheerful. Here's how to make a delicious potato tortilla.
500g of potatoes cut into thin 1cm slices
60ml (1/4 cup) of olive oil 1 brown onion thinly sliced 4 garlic cloves thinly sliced 2 tablespoons of flat leaf italian parsley 6 eggs A sprinkle of any cheese (parmesan, fetta or even good ol' tasty)
What to do:
1) Place potato slices in a large saucepan. Cover with cold water. Bring to boil over high heat. Boil for 5 minutes then drain and put aside.
Slice potato thinly.
Boil potato slices for 5 minutes.
2) Heat the olive oil in a frying pan over medium heat. Add the onion, garlic and cheese. Cook for 5 minutes or until the onion softens.

3) Add the potato and parsley to the pan and stir to combine. Cook over medium heat for 5 minutes gently pressing down into the pan.
