Heat oil in a large saucepan. Add onion and saute for 5 minutes. Add capsicum, garlic and ginger and cook for 5 minutes. Remove one cup of the vegetables and set aside.
To the remaining amount, add the cumin, coriander, chilli powder, cinnamon, cardamom seeds and turmeric and stir for 1 minute. Add the basmati rice and stir for 1 minute. Add vegetable stock, chickpeas, sultanas and the cup of vegetables that you took out before. Put the lid on and bring to the boil and simmer on very low for 5 minutes. Lift the lid to stir and then put the lid back on and cook for another 5 minutes. Stir again, ensuring it's not sticking to the bottom. Take a spoon of the rice and taste test, to check that it is soft and ready - if not, add hot water and put the lid back on for a few more minutes. When the liquid has evaporated, stir through frozen peas and serve.
In a medium-size pot, saute the garlic and onion until soft and translucent. Add the smoked paprika, oregano, cumin and dry rice to the pot. Stir for 2 minutes to toast the rice and spices. Add the chickpeas and frozen spinach (no need to thaw), and stir in 2 Tablespoons fresh lemon juice. Add the vegetable stock. Place the lid on and bring to the boil, then reduce heat and simmer on low for 20 minutes. Stir in the peas and put the lid back on. Sit for 5 minutes. Sprinkle with lemon zest and fetta and serve.
3/ Easy Vegetarian Pizza
Ingredients: 1 large pizza base (bought or made), 1/2 capsicum (sliced in length), 1/2 red onion (sliced into rings), 3 large mushrooms (sliced), 2 Tablespoons tomato relish, 1 Tablespoon onion relish (we use Beerenburg brand) and a scattering of mozzarella cheese.
Preheat oven to 200 degrees, fan-forced. Spread tomato relish over the pizza base. Using 1/2 a teaspoon at a time, drop onion relish in dots around the pizza. Lay capsicum in a star pattern, from the centre going out. Arrange mushrooms in between and scatter the red onions. Sprinkle with mozzarella cheese over the top. Cook for 15 minutes.
