A taste of Christmas all year around
There are some flavours which just taste like Christmas. Ginger spice always reminds me of gingerbread men, whilst nutmeg and cinnamon remind me of Christmas cakes, puddings and fruit mince tarts. This recipe below, reminds me of Christmas each time due to its fragrant spices, mixed fruit, cranberries and coconut - it's simply delicious!

When you look at the ingredients list below, it looks quite long, however feel free to substitute some of the ingredients for ones that you have in your pantry. This particular recipe was created after a lot of trial-and-error to ensure it held together, but if you make up your own version and it looks a little dry, just drizzle it with honey or pour over more melted chocolate to help it hold together. It's worth the effort!

The taste of Christmas


Ingredients:

1 cup oats
1 cup unsalted cashews
1/2 cup desiccated coconut
1/2 cup dates
1/2 cup prunes
2 Tablespoons cocoa powder
2 Tablespoons honey
1 Tablespoon olive oil
1/4 cup peanut butter
1 teaspoon vanilla essence
1 teaspoon cinnamon
1/2 teaspoon nutmeg
1/2 cup mixed dried fruit
1/4 cup cranberries
1 and 1/4 cups Nestle Choc bits (divided into 1/2 cup and 3/4 cup)




What To Do

Step 1: In a food processor, add the oats, cashews and coconut. Blitz until fine.

Step 2: Add the dates, prunes, cocoa powder, honey, olive oil, peanut butter, vanilla essence, cinnamon and nutmeg. Blitz until as fine as possible.

Steps 1 -2


Step 3: Remove the blade and stir through the mixed dried fruit, cranberries and 1/2 cup Nestle Choc Bits.

Step 4: Add the remaining 3/4 cup of Nestle Choc Bits into a microwave-safe bowl and melt at 30 second intervals until smooth. Stir through the mixture quickly.

Stir through the mixed fruit, cranberries and Choc Bits, then stir through the melted chocolate...


Step 5: Pour the mixture into a lined rectangle slice tray and press down firmly with the back of a spoon, then the bottom of a glass. Place in the fridge overnight to harden.

Step 6: Remove and slice into squares.

* Tip: If you have any corner pieces that crumble off, sprinkle them over ice-cream for a Christmas-flavoured dessert! Enjoy!

Press down firmly in a slice tin and place in fridge overnight...

Slice up into squares

If you have any corner pieces that crumble off, break it up and sprinkle over ice cream for a Christmas dessert!
