Another excellent dish out of Darriwill's kitchen to rival the pork belly I had by the Executive Chef of Hotel Windsor for the Look.Stop.Taste festival. The Berkshire pork remained moist and juicy topped with a crackle. The blood sausage and crisp pigs ears were an unconventional but welcomed addition to the dish.
