Coconut, Vanilla, Cinnamon, Honey and Macadamia Cake can be shared around the table at Christmas and makes for a nice dessert after dinner. You can even give to friends or family as a small gift.

Either way, this cake is mouth-watering.


2 cups self raising flour
3 tbsp honey
Handful of macadamia nuts, crushed
1 cup of butter, softened
2 tbsp cinnamon
1 tbsp vanilla essence
1/2 cup coconut
3 eggs, beaten


1. Preheat oven to 180 degrees celsius. Beat together the butter and flour. Then gradually add the beaten eggs into the bowl until light and fluffy.

2. Add the honey, nuts, cinnamon, vanilla and coconut and mix well. Place into a non stick baking pan. Bake for 45 minutes. Leave on cooling rack for 10 minutes.
