Are you looking for a delicious slice recipe for a school fete, a family birthday or for when guests come over? This Coconut and Strawberry Jam Slice is loved by everyone. Literally. Every time I have made it, people creep back for a second slice...then a third...and before you know it, it's all gone! It is also easy to make, with ingredients you may already have in your pantry and fridge. There are no fancy ingredients here - just plain old, flavoursome, home-baked goodness.

Ingredients:
3 cups desiccated coconut
1 cup plain flour
1/2 cup self-raising flour
1 cup caster sugar
1/2 cup icing sugar
3/4 cup strawberry jam
150g margarine
1 egg yolk
3 eggs
Instructions:
Step 1: Preheat oven to 180 degrees and line a rectangle slice tin with baking paper. Place both flours and icing sugar into bowl and rub in the margarine with your fingertips, until mixture is crumbly. Mix in egg yolk and combine.
Step 2: Press this dough into the tin and refrigerate for 10 minutes. Bake for 15 mins until golden brown. Allow to cool.
Step 3: Spread jam evenly over the top.

Bake the base for 15 minutes, allow to cool then spread jam over the top
Step 4: Beat the caster sugar and eggs together until creamy. Stir in coconut. Spread mixture over jam, gently pressing down and smoothing with the back of spoon.
Step 5: Bake for 25 - 30 minutes, or until lightly golden. Leave to cool in tin. Cut slice into squares.

Smooth on the coconut mixture and bake for 25 minutes. Allow to cool in tray before you cut up into slices

This recipe may take a while to make, but the results are worth it. You can cut the slice up into small squares, as it is quite sweet and filling, so it lasts for a few days in a sealed container. I can guarantee however, that it will disappear on the first day...
