Summary



This book is packed with everything from lasagna, chili, fajitas, casseroles and soups. There are even desserts. These recipes are wonderful for everyone, from students to someone just wanting something from scratch. For those who are just downright clueless, this book is just about perfect.

*Appetizes, Munchies and Starters

Quesadillas

I prepare these for myself quite frequently! Sometimes I call these microwave pizza or sometimes microwave quesadilla. The difference is the cookbook recipe is prepared on a skillet and kind of calls the recipe a "pizzadilla". This is a meal for me!

Simply, lay a tortilla wrap on a microwavable plate. Spread sauce and then layer toppings. Place another tortilla wrap on top. Microwave for 1 minute. Voila!

This gets even better...

Do-It-Yourself Dips

Dijon Dip
This simply calls for sour cream or yogurt with mustard and condiments!

Homemade French Onion Dip
Simply onions, oil, salt, sour cream and mayonnaise!

7 Layer Taco Dip
Personally, I like taco salad, but not with avocado. Then, I like mozzarella with cheddar or Mexican blend.

Breakfast Special
Milk, yogurt, orange juice and a ripe banana! Throw the contents into the blender and voila!

*Soups and Salads

Potato Soup
Yet another recipe that I make quite frequently, except, I prepare in the Crock-Pot. Also, I use shredded cheddar cheese in my version as makes it creamy.

Chunky Pasta Salad
Very delicious and so frugal to prepare. A tip - shop at your local dollar store for pasta, canned vegetables, cooked meat, cheese, etc. You probably already have oil, mayonnaise, yogurt, vinegar, garlic, salt and pepper!

Crunchy Cucumber Salad
Is grocery money low? How about 2 cucumbers?

Step Away From The Bottle… You Should Make Your Own Salad Dressing!

Creamy Italian Dressing
Desperation Ranch Dressing

*Mainly Meat

A Perfect Burger
A recipe that you can mess with!

Fabulous Fajitas
A wonderful way to stretch money and has a vegetable option too!

Fried Rice With Whatever
Good with "day old" rice and things lurking in your fridge!

*Primarily Pasta

Big Batch Spaghetti Sauce
This is almost like my recipe, but I include wine.

Classic Spaghetti With Meatballs
My version? I simply prepare with meatballs bought from the freezer section of the local dollar store! Tastes just as delicious! In the past though, I had a recipe for sour cream meatballs that would be so awesome.

Spicy Peanut Pasta With Meat and Vegetables
I simply prepare my version with Ramen, peanut butter and soy sauce. If there are little things in the fridge, I have thrown them in once or twice. As the book states, this is very delicious, totally addictive and super easy. I might also mention frugal!

Single Skillet Spaghetti
All that is left for you to wash is a spoon and a single frying pan!

*Vehemently Vegetarian

Potato Paprikash
Who said that you cannot have potatoes for dinner? Include a salad, then you have a 2-course meal!

*Eggs, Pancakes and Other Breakfast

Included are "Five Ways To Turn Eggs Into Dinner" and "Bacon, of course".

Oatmeal From Scratch
Included are stovetop and microwave directions.

French Toast For Two
Leftover bread, an egg, a little milk… It just happened. Feel free to double or triple this recipe whether dining alone or for a crowd.

*Things On The Side

Included in this section is an "incomplete guide to vegetable cookery". The guide comes in handy. Also, ways to "cook rice" are included too.

Refried Beans
Prepare your own, be cheap and healthy. Use for a tortilla, a dip, over tortilla chips or with eggs as a breakfast!

*Baking Up A Storm

If you like baked goods, this one is for you!

Opinion

Out of *Soups and Salads, there are so many that I like! Definitely not enough moments to discuss each one. I may as well rewrite the entire book. The Gazpacho recipe is awesome! The Corn Chowder is awesome!

The *Something Fishy chapter did not seem appetizing.*Pizza was not very impressive.

Out of *Eggs, Pancakes and Other Breakfast, there are so many to like, again, I would be repeating the entire book! They include Pancakes Not From A Box, Whole Wheat Blueberry Yogurt Pancakes and then Crepes.*Baking Up A Storm is beyond words! I feel like my mother wrote this book or something!

I am buying myself a used copy of this book. I really, really do like just about almost all of the recipes, give or take a couple that I don't As-a-matter-of-fact, I have just returned from having a frittata! Delicious!

So, mother Rose Spontaneo, you must be thinking of me as I sure am thinking of you! Hugs!
