It is hard to be healthy at Christmas, but with this tasty Christmas Peppermint Bliss Balls recipe, you can eat well and not miss out on the flavour! If you love the taste of candy canes, then you will love the flavour of these bliss balls. I add just 1/2 a teaspoon of peppermint essence and that is enough to create a deliciously fresh flavour, without being too overpowering. Don't be tempted to add more!

When I made these for my family, my daughter said that they looked like reindeer poo! It wasn't exactly the compliment I was hoping for, but luckily they taste better than they look...



Ingredients:

**1 cup unsalted cashews
1/2 cup oats
1/2 cup dried pitted dates
1/3 cup cacao
1/4 cup desiccated coconut
1/4 cup water
2 Tablespoons maple syrup
1/2 teaspoon peppermint essence**



What To Do:

Step 1: In a food processor, add the cashews and blitz for 1 minute until fine.

Step 2: Add the dry ingredients - oats, dates, cacao and coconut - and blitz until dates are chopped.

Step 3: **Add the maple syrup and peppermint essence into the top of the processor. Add half the water and blitz for 30 seconds. Lift the lid and check the consistency of the mixture - if it is too dry, add the remaining water. It should be fudgy enough to roll into moist balls.

Step 4: Place balls on a plate and refrigerate for an hour. Serve when ready!
