A must for all chocolate-lovers
If you love chocolate, then you won't be able to walk past a plate of these moist and delicious mini cupcakes. As you peel off the paper cases, you will "ooh" and "aah" over their dark centres and take in the warm smell of double chocolate. The secret ingredient that makes these little cakes so moist is the addition of sour cream to the mixture, which also seems to add a depth of flavour, as well as add to their light and fluffy texture. They are so easy to make - it is literally just a matter of mixing all the ingredients all in one bowl!

Easy to make and easy to eat!


Ingredients

1 cup raw sugar
1 cup plain flour
3 Tablespoons cocoa powder
1 teaspoon baking soda
1 teaspoon vanilla essence
2 eggs
1/2 cup sour cream
1/4 cup Nestle Choc Bits (for cupcakes)
1/2 cup Nestle Choc Bits (for icing)
Fresh strawberries, sliced and quartered

What To Do

Step 1: Preheat oven to 180 degrees.

Step 2: In a large bowl, combine the raw sugar, plain flour, cocoa powder and baking soda.

Step 3: Add the vanilla essence, eggs and sour cream and stir to combine. Fold through 1/4 cup Choc Bits.

Combine all the ingredients in one bowl

Spoon the cake mixture into the patty pans


Step 4: Place mini patty pans in a 24 hole mini muffins tin. Spoon 1/2 a tablespoon of cake mixture into each one, filling the cases 3/4 full.

Step 5: Bake for 15 minutes. When you put a knife in the cakes to check they are cooked, it may still come out wet as the cakes are so moist. Allow to cool.

Step 6: Place 1/2 cup of Choc Bits in a microwave-safe bowl and microwave at 30 second intervals until smooth. Place a dollop of melted chocolate onto the top of each cake and press a strawberry piece on top.

These decadent little chocolate cakes are moist, chocolatey and perfect for morning tea with friends or a children's birthday party. Feel free to add new ingredients or change the decorations, and make them your own. One thing is for sure - they are a "must" for any chocolate-lover!
