It will take me more time to write this article than it takes to make this mousse. It is so simple and quick to make and it tastes like you spent an hour making it, not the 5 minutes it actually takes once you've assembled your ingredients. Jamie Oliver would be jealous.
Make it the day before or in the morning if you want to serve it after dinner. The kids could even whip this up for Mum on Mother's Day with just a little bit of help.
185 g dark chocolate (I use the Plaistowe brand) 1 egg 1 tsp vanilla essence 300ml thickened cream
Method Break the chocolate up into small pieces (I softened mine ever so slightly in the microwave, just don't let it get to the melting stage).
Place the chocolate along with the egg and vanilla essence into a food processor with the blade attachment.
Heat the cream on the stove top until just boiling (but don't let it keep boiling).
Turn the processor on and slowly pour the cream in. Process until blended.
Pour into 4 individual dessert bowls and refrigerate until set.
Serve with clotted cream and raspberries.
(Last time I made this, I successfully doubled the recipe to feed 8).
