Baking Brownies For Fun

3/4 cup white flour
100g unsalted butter
3 eggs
3/4 cup chopped walnuts
18 ounce cream cheese
1 1/4 cup sugar
1/2 cup cocoa powder
1 1/4 tsp baking powder
1 1/4 tsp vanilla essence
1 tsp instant coffee melted in 2 tablespoon hot water

Get the ingredients ready in three separate batches:

Start with the cheese and butter in one bowl.

Get the powders in another bowl - cocoa and flour.

Lastly, heat some water in a cup for about 30 seconds (less than a quarter cup of water is perfect) and then add a teaspoon of coffee to it. Mix well, followed by adding some vanilla essence.

Now, cream the butter and cheese with a beater till there are no lumps found.

Taking turns with the egg one at a time, gradually add the sugar and eggs alternately and beat well with the beater. Look out for lumps and keep beating till you get a smooth mixture.

The next part is where some serious hard work comes in.

Add the powder mixture with the flour and cocoa powder and baking powder and beat well again till the mixture is one smooth, creamy mix.

Add the coffee and vanilla essence and give the mixture a final whirl.

After the mixture has been prepared, add the chopped walnuts and mix well with a spatula.

Grease a 9-by-12 pan by spreading the butter over it.

Mildly dust it with some flour.

Pour the prepared batter into this pan.

Preheat the oven to 180 degrees (centigrade) for about 5 minutes.

Place the pan into the oven for about 25-30 minutes and then test it with a tooth pick to see if it has been cooked all the way through.

Serve with a scoop of vanilla ice-cream on the side.
