A warm comforting muffin recipe using Greek yoghurt
As I write this in lockdown, like many areas around Australia, I start to look in the pantry to see what recipe I can come up with, with what I have on hand. This recipe, below, turned out to be a winner using just 6 ingredients and Greek yoghurt, so it's even healthier for you. You don't need lots of ingredients to make a tasty morning tea that the whole family will love. When you can't go to the shops very often, you need to start to get creative.
Why don't you give it a try? The large Choc Melt on top is soft and gooey, but any piece of chocolate you have on hand will also be just as delicious. It's a must for any chocolate addict!
1 egg 1 cup Self Raising Flour 1/4 cup sugar 1/4 cup cacao or cocoa 6 Nestle Choc Melts
Preheat oven to 180 degrees, fan-forced. In a small bowl, combine the yoghurt and egg, and stir. Add the flour, sugar and cocoa and stir. Spray 6 holes on a muffin tray and spoon 1 - 2 Tablespoons into each one. Place a Choc Melt on top. Bake for 12 minutes, until cooked inside. Allow to cool slightly in the tray. Eat warm, while the Choc Melt is still soft. Serves 6.
You can make these cute little muffins in less than 15 minutes. They smell so warm and comforting when they come out of the oven - 6 definitely won't last long!
Spoon the mixture into 6 muffin holes and bake for 12 minutes
