Have you ever tried Chocolate and Black Bean Brownies? The tinned black beans provide moisture to the brownies and they are full of fibre and protein, making them a healthier way to enjoy this chocolatey treat.
Our family have previously made this recipe as a slice, baked in a tray and sliced into brownie squares. We did find however, that because they were so filling, we preferred to cut them up into smaller squares to enjoy as a snack. My daughter then came up with the idea of baking them in the mini muffin tin, which are the perfect size and ideal for little hands. The best part for kids, is that you can't taste the black beans and it fills them up in a few bites. It also has chocolate - and who doesn't love chocolate? It is the perfect recipe to try this weekend!
Ingredients:
**420g can of Black Beans, drained and rinsed
1/2 cup rolled oats
1/3 cup honey
1/4 cup olive oil
2 Tablespoons raw sugar
2 Tablespoons cocoa powder
2/3 cup Nestle Choc Bits**
What To Do
1/ Preheat oven to 180 degrees, fan-forced.
2/ Combine all the ingredients (except for Choc Bits) in a food processor.
3/ Take out the blade and stir in Choc Bits.
4/ Spray a 24 hole mini muffin tin with olive oil spray. Use a teaspoon to spoon the mixture into each hole, level with the top.
5/ Bake for 20 minutes until firm on top.
6/ Allow to completely cool in tin, then use a spoon to lift them out.
7/ Enjoy as a snack - they go perfectly with a cuppa!
