Can jam really be jolly?


Can jam be jolly you ask? Of course it can ... especially if it is Christmas time and the chillies and peppers in the jam are so red that you can't help but feel jolly when you look at it.

This is a great jam for glazing your Christmas ham or as an accompaniment to your Christmas turkey instead of the traditional cranberry sauce.

Oh so easy to make you could bottle them up as gifts and top them with an oh so jolly sparkly ribbon.

You need:
as many fresh, red chillies as you like; one red pepper; 1 kg of jam setting sugar; 650ml apple cider vinegar.

You do:

De-seed the chillies and peppers and cut into chunks.

Process them to make a bright red mess in your blender.

Pour the vinegar and sugar into a large pan and let that simmer away until the sugar completely dissolves.

Try not to stir it or the sugar will crystallise and stick together like candy.

Once the sugar has disappeared stir through the peppers and chillies mix and let it reach bubbling point.

Turn off the stove and let it cool right down.

Pour into jars to keep but there is no need to refrigerate until opened.

If you are giving this lovely jam as a gift let it sit for a month before giving.
