This will be a barbecue that is fun for the whole family
A barbecue festival will be just what the doctor ordered after our cold winter. With spring upon us, the weather is now warming up and what a fabulous time to hold a barbecue.
Fun day for all
This one will be held in the serene suburb of Chidlow, which is a small community in the Shire of Mundaring, and approximately 45 kilometres east of Perth. No matter where you live in Perth, this will be a nice leisurely drive and a fun family day in the Hills.
This barbecue will be on Saturday 15th and Sunday 16th September 2018. The gates will open at 10.00 am, and it is situated at the corner of Thomas Street and Memorial Avenue in Chidlow.
Organised by The Chidlow Tavern, this is the second barbecue for the year.
At this Event, you can:
WATCH - Live BBQ demonstrations from the Kansas City Barbeque Society
EAT - There will be loads of BBQ vendors across both days
DRINK - Drop into the local tavern and grab a coldie
JUDGE - In the Chidlow Choice Competition (an additional fee applies)
LISTEN - To the live music from local bands competing in a Battle of the Bands competition
SHOP - With local street market vendors
CHILL- On the grass with friends and family and soak in the atmosphere around you
ENTER a two Day Judge's Course (qualifying you as KCBS judge internationally)
Vegetarians are not forgotten here, as for those who don't barbecue for whatever reason, they will have a Battle of the Bands, and entertainers.

The Barbecue Low & Slow BBQ has become all the rage in Australia. It has actually become all the rage all over the world. KCBS (Kansas City BBQ Society) has an International outreach team who travel all over the world to teach people about BBQ.
There are thousands of certified judges, regular contestants and fans of BBQ everywhere! For the competitors, this is something that is taken very seriously! Contestants compete for world titles, as well as the right to compete at some very large events in the USA.

If you have ever watched the Foxtel show, BBQ Pit Masters on television, you will have seen some world-class competitors. This also includes some famous names, who are all competing to win the latest title of the BBQ!
Recently, Australia has taken on the BBQ Challenge. It has been so well received that there are now two competing factions that govern how Low and Slow BBQ is done in the country.

Battle of the Bands
Our pubs used to have live music several times each week, and now many contributing factors have largely seen an end to the once very vibrant, live music pub culture here in Western Australia.
The hills area has some awesome talent, and there is probably a lot more in other areas around WA. This battle will give both young and older musicians a place to showcase their music in a live and stage environment.
There will be a large performance stage, with bands scheduled on both days. The audience members and a panel of judges will be on hand to do the voting.
The KCBS Certified Judging
This is a two-day seminar event and is for anyone who wants to learn more about how to BBQ, as well as becoming a certified judge!
It will feature an introduction to KCBS Style of BBQ Cooking and Mock Contest. The programme and times are as follows:
8:00 am - 9:00 am - Participants arrive at 1320 Allen Street. This group includes cooks and people who want to become judges.
10:00 am - 12:00 noon - participants attend a PowerPoint Presentation conducted by Jim Johnson:
Cuts of Meat - differences between US and locally available cuts of meat
Flavour Profiles - includes a sampling of US sauces
Temperature and time - difference between low and slow and hot and fast. Rubs, sauces, marinades and injections - when and how to use them.
Hands-On Prepping of the four KCBS meats - timing and competition scheduling.
5:00 pm - 6:00 pm - Dinner Break
6:00 pm - 11:00 pm - working with teams to form a mock contest. Participants will be divided into teams and will prepare and cook meats overnight for CBJ class/mock contest.
