My mum is Italian and a great cook, but even as a great cook she has her lazy days where she came home from work and really didn't feel like slaving away for hours cooking a big meal for two (sometimes) ungrateful kids.

This is a recipe that I think every mother has in their inventory for those days and I was blessed that mine handed this down to me. I am also relieved that it is one of the easiest recipes to complete as I unfortunately didn't get the cooking gene.

Cooking time: 1 hr
Quantity: Makes around 4 – 5 bowls
Ingredients: 5 – 6 raw chicken wings
2 carrots – peeled and quartered (long sticks)
1 brown onion – quartered (big chunks)
Angel Hair Pasta (approximately a small handful)
Pinch of Salt
1 big pot (for soup) 1 smaller pot (to cook the pasta)
Boiling Water

Directions:** Fill a large pot with ¾ boiling water (from the jug – to quicken the process) and leave to boil. Prepare the vegetables and chicken. Once the water is boiling add the chicken, vegetables and a dash of salt and leave to boil for 1 hr.

Forty-five minutes into the process take the pasta and break it up into smaller pieces (around 2-5cm long). Add into the smaller pot with water and a dash of salt. Boil until cooked (I just check by taking pieces out and eating them at intervals, normally takes just under 10 minutes to cook).

Once the pasta is boiled, strain and set aside. Check the soup by picking up a chicken piece with a pair of tongs, and with a fork see how easily the meat falls off the bones. If it falls off easily the soup is ready.

Take the soup off the stove and remove the chicken bones (I did this by taking out the wings and using tongs and a fork because the chicken is still hot).

If your household doesn't like the vegetables (like my partner) then strain the soup into another smaller container re-adding the chicken and keeping the vegetables optional.

Last step: add in the cooked pasta and you're ready to eat with a side of fresh buttered bread and any additional salt to taste.

This recipe can also be used with additional vegetables and vegetable or chicken stock to make a 'fuller' soup. I've only detailed above the easy, cheap version. And yes, I did say cheap, the total for this recipe should be under $20.
