Chicken Fillets Stuffed with Feta, Basil & Pesto Recipe

I made up this recipe when I was looking for something different to do with chicken fillets. Also, since I work full-time, I like to make meals that are healthy but I can put together in 30 minutes or less.

So this is what I came up with from basically left-overs.

Ingredients
2 chicken fillets
100g of crumbled feta
1 tablespoon of sun-dried tomato pesto
Handful of fresh shredded basil

Mix all together

Method**
Make a pocket in the fillets with a sharp knife
Stuff the feta mix in firmly

Place the chicken in lightly oiled baking dish.
Brush with a little more olive oil.
Sprinkle with a little salt & pepper.
Bake in a 180c oven for about 1/2 hour or until browned and cooked through.

I also roasted some cherry tomatoes at the same time.
I used skinless fillets but I think they might have looked better if I had used ones with the skin on.

Serve with a nice salad.
