Delicious and easy to make

Chicken in coconut sauce is a super easy and delicious dish that you can prepare quickly and still have a fancy dinner.

The coconut flavour is subtle, not overpowering or overly sweet. It's a good choice when you are not in the cooking mood, but want to have a nice meal.

I prepared it with asparagus (because I'm trying to be on "diet") and I think is delicious, but if you serve it with boiled rice, it's out of this world too!

Cook Time: 15 minutes
Serves: 2


2 boneless skinless chicken breast fillets
1/2 teaspoon curry (I used mild but if you rather spicy, that's okay)
4 tablespoons olive oil
3/4 cup finely chopped white onion
1/4 red bell pepper, finely diced
1 can coconut milk
1 bunch of leek (pale section only, washed, dried and thinly sliced)
2 bunches of fresh asparagus
salt as you like


1. Slice the chicken breasts in dices.
2. Toss the chicken breasts with the oil and salt.

3. In a skillet, sauté the chicken breasts until golden brown. Remove chicken to a plate and set aside.

4. Add chopped onion, red pepper and leek to the skillet. Stir in and sauté until soft and fragrant.

5. Add the chicken breasts. Toss a little bit with the vegetables.

6. Add coconut milk & curry to the skillet. Cover and simmer for 10-15 minutes, or until chicken is cooked through and tender (do not overcook).

7. In a saucepan, bring water to the boil and simmer the asparagus for 7 minutes

8. Serve warm and enjoy.
