I love, love, love this stuffing recipe, and every time I make it I get asked for the recipe. This will have your dinner guests coming back for second helpings. If there is any leftover, this makes a great addition to a cold turkey sandwich. Yum.

1 onion finely chopped 100g fresh white breadcrumbs 1 medium egg beaten 1 tbsp finely chopped fresh sage
What to Do:
Oven: Preheat oven to 200°C or 180°C for a fan assisted oven.
Step 1: Heat the butter in a small pan until sizzling, then add the onion and cook gently for 5 minutes until translucent. Set aside to cool.
Step 2: Place the sausage meat into a large bowl and break up the texture. Add into the bowl the onion, chestnuts, breadcrumbs, egg, chopped herbs, seasoning and mix thoroughly. Tip - at this stage you can cover and chill until needed (e.g. you can make this a day ahead).
Step 3: You can either roll the stuffing mix into balls and place into the oven, or cook the whole mix in a buttered shallow ovenproof dish. Cooking time is 30-35 minutes until the stuffing turns golden brown.
You can substitute the onion with shallots if you want a deeper flavour.
