Fresh roasted coffee can now be found in the Blue Mountains at Cassiopeia Specialty Coffee; with locations in Springwood and Katoomba.

I visited the Springwood store which is tucked away in The Townhouse Plaza, just off Macquarie Road. The store is small but has seating that spreads out into the covered arcade where there is space for kids to run around.

With a simple and clean interior, featuring white-tiled walls and metal lampshades, Cassiopeia Specialty Coffee offers a menu focusing on the important things in life; coffee and freshly squeezed juice.

Expect to find superb coffee sourced directly from farmers (where possible) and roasted in Katoomba, so you know it's fresh. The baristas are passionate about creating exceptional coffee, every time.

As for the coffee, what started out light, soon grew with complexity and moved into rich earthy flavours, with a velvety texture and no perceivable bitterness. The coffee grew more robust as I neared the bottom of the cup and as I sipped the last mouthful, I was floating with caffeine giddiness. For someone who drinks two to three strong coffees a day, this is a rarity.

Cassiopeia offers locally sourced snacks and I complemented my coffee with a slice of toasted banana bread which was crispy, light and glistening with butter. The cost for a triple shot latte and banana bread was only $8, which is good value.

You can buy beans to use at home at $12 each for the house blend or two bags for $20.

During winter, Cassiopeia also offers hot-filtered coffee whilst in summer they offer cold-filtered coffee.
