I was lucky to secure myself a ticket to Design and Make Fair - Customised Cake Design Live Demo - a key highlight of Singapore Design Week 2016. The demo class was limited to only ten people.

On the designated day I managed to come on time and sat for the demo class at the National Design Centre Level 2 Training Room. The team was already in their booth with their amazing goodies.

Chef Nicholas Ang led us in the process of making David Austin Roses. He prepared the coloured doughs in advance. First he started with the green colour dough which he rolled until it was really thin. He cut it with a leaf-shaped cutter and inserted a thin wire stick into it.

Then he worked with the pink colour dough. He cut five round-shaped pieces from the dough. With a spoon, he curled each petal in an attempt to make it natural. He continued to work with a bigger size round-shaped cutter, as a real rose would have bigger petals on the edges and the rose would get lighter colours gradually. Finally he assembled a blossoming pink rose with leaves.

Few participants got to try their hands onto making the leaves and rose petals. I was one of them. It was not a simple process at all! Definitely not as easy as I thought initially. Imagine if you could master this skill and present a beautiful birthday cake to your loved ones!

Both The White Ombré chefs - Nicholas Ang and Tricia Tjhin - teach in their creative cake workshops where they use fondant to make the following cake décor designs: handcrafted Birkin bags, lions, dinosaurs, anime characters, cute owl figurines, exquisite David Austin sugar roses and many more.
