This primarily is the reason I jumped at the opportunity to attend a mini masterclass with one of this year's Top 9 Wedding Cake Designers.
Last week I had the huge privilege to meet Caitlin Mitchell. Caitlin is the Creative Director of A Little Cake Place in Brisbane. Her haute couture wedding cake designs are a marvel. Drawing inspiration from her love of fashion and architecture, she constructs edible works of art that include her exquisite signature Chandelier /upside-down hanging cakes.
Having just returned from a trip overseas, I found myself looking at cake and feeling the same way I felt when my eyes first set upon the Palace of Versailles or the famed Trevi Fountain. Just in utter awe!
I also felt a little intimidated given that my cake artistry skills are… well, It would be fair to say I have none. I had none.
Fortunately, Caitlin could not be any nicer or more encouraging and patient. In her cake room, we learned a few trade secrets as she demonstrated how to decorate the below cake. With a glass of champagne and plenty of clear concise instructions, we were each able to achieve what I thought was bound to look more disastrous and less couture. The masterclass was amazing!
This masterclass was just a sweet taste of the main event. Brisbane, you too will have the opportunity to attend in May. To learn from some of the industries finest. Caitlin will be one of the experts demonstrating at the International Cake Show this May! I highly recommend attending. I enjoyed her class and left with a whole new level of understanding, skill and inspiration.
Early bird tickets are $24 for one day. Once inside all the masterclasses and demos are free. There will also be three "Live, Laugh & Learn" stages holding free demonstrations on the hour every hour.
Caitlin and the other eight finalists will compete for the country's most coveted cake industry award, the Australian Haute Couture Wedding Cake Designer of the Year award. The theme this year is the Royal Wedding of Prince Harry and Meghan Markle! Members of the public, attending the show on Friday 18th and Saturday 19th May, will vote to select the top design.
The other incredibly talented finalists are: Sarah Jane Wicks from Brisbane
Monica Cavallaro from Sydney
Faye Cahill from Sydney
Louisa Massignani from the Gold Coast
Zoe Clark from the Sunshine Coast

Greg Cleary from Brisbane
Shayne Greenman from Mt Tamborine.
