Are you one of those people who hate eating your greens? Or one of those parents who hate hearing your children complain about eating their greens? Then why not turn a boring vegetable like broccoli into a tasty meal the whole family will enjoy.

For this recipe you will need:

Serves 4
400g pasta (your choice)
750g broccoli
1/4 cup olive oil
2 garlic clove, crushed
chilli powder (optional)
100g crushed almonds (roasted)
1/4 cup toasted breadcrumbs
freshly ground pepper
1 lemon (juice)
Parmesan cheese, to serve (optional)

Once you have your ingredients follow these simple steps:

1. Chop the broccoli into pieces and boil [around 10 minutes]. Add salt to the water.

2. When the broccoli is half cooked, add the pasta.

3. While the pasta and broccoli are cooking together, in a different saucepan, heat olive oil with garlic. Add desired amount of chilli powder and gently fry until garlic is golden brown.

5. Once the pasta and broccoli are cooked, drain and return to the pan. Add the almonds, oil mixture and juice of one squeezed lemon.

6. After mixing, add the breadcrumbs and freshly ground pepper. Mix again and serve.

7. Sprinkle some Parmesan cheese to finish.



Tip: If your family like olives add some to the oil mixture for extra flavour.

I will admit it, I used to be one of those kids who moaned whenever mum said we were having broccoli. But, this dish surely knows how to silence me.

Perfect for lunch or dinner, this is broccoli with bite.
