Incube.8r is a permanent store in Brisbane CBD that rents floor space (in the form of glass cubes) to local artists to sell their wares.
In-cog-neato Coffee, Collectibles and Deadly Treadlys fuses shopping and dining so seamlessly that it's hard to know if this West End joint should be called a cafe or a vintage store. In-cog-neato provides visitors with coffee and light meals like toasties, muffins, and cakes to enjoy while treasure hunting.
How about shopping and dining in a renovated gaol? The Barracks was originally the Brisbane Petrie Terrace Gaol and underwent several transformations before becoming a retail precinct in 2007. The Barracks offers boutique retail outlets, quality dining and a cinema.

Brisbane may have unique shops, but given the definition of unique is 'being the only one', it's impossible to have shades of uniqueness ie something can't be more unique than something else, let alone 'most unique'. So good luck in your search ... if you find the 'most unique' you'll have done something that's never been done before.
The Sheil Collection in the Brisbane Arcade is the oldest only Australian made shop in Brisbane. Is has funky pieces, traditional and unique quality gifts for every occassion.
