What am I talking about? The Strawberry Watermelon Cake of course! This picture-perfect gluten free cake is layered with almond dacquoise (meringue cake), rose-water cream, and slices of fresh watermelon, and topped with strawberries, pistachios, and dried rose petals.
Not only is it picture-worthy, but the delicate sweet and refreshing flavours make it a splendid spring or summer dessert. The cake was in fact originally created as a wedding cake and certainly evokes a sense of beauty, passion, and love.
You can find the recipe here, but why not leave it to the expert chefs, and enjoy a slice with a glass of champagne! The pop-up Melbourne store is open Monday to Thursday from 8am to 4pm, and Friday to Sunday from 8am to 5pm.

Raspberry Lychee Cake: chocolate-biscuit base, raspberry marshmallows set into vanilla cream, and fresh lychees and raspberries on top.
Japanese Forest Cake: layers hojicha sponge, Choya confit ume fruits in umeshu infused cream.
