Where can you get some advice about buying chocolate?

Jan Cranitch kindly told me about her favourite chocolates stocked at Black Pearl Epicure. She juggles her knowledge of chocolate, cheese and caviar as the Storeroom Manager. When you visit the shop in the Valley she will probably be the first person you meet.

1. In top place Jan recommends French Valrhona 100% cocoa powder for the taste and versatility in cooking at home.

2. Second spot is closely followed by 70% Valrhona chocolate blocks. They are smooth, decadent and perfect to serve at the end of a meal matched with wine or cheese.

3. Valrhona Dulcy is one of their most popular selling chocolates. It tastes like caramel and white chocolate combined.

4. The next spot is taken up by Valrhona 66% Noir Caraibe. It is not too bitter and is known for a good balance of flavours and a velvety taste in the mouth.

5. Mazet is a French Chocolate maker and Confectioner since 1903. Jan recommends the milk chocolate blocks in the flavours of salted caramel or raspberry. The berry one is the author's personal favourite.

6. For something different you could try Elegant English chocolate and raspberry all butter biscuits.

7. Lastly Jan likes Rinaldi chocolate hazelnut nougat bars with Australian honey.

Black Pearl Epicure also stocks Simon Johnson's Chocolate Coated Hard Nougat, Simon Johnson Dark Chocolate Florentine Biscuits and Caffarel chocolate (shaped) fish from Italy.

Jan can tell you the steps to making the perfect triple chocolate muffins or decadent chocolate truffles for adults only. She recommends you store your chocolate between 12 degrees and 16 degrees.

Is it fair trade? I refuse to buy any chocolate that isn't.. there's just no excuse for allowing child slave labour just for my chocolate fix
