Doing shift work in the area, I had often heard of this mystic place which did amazing scrambled eggs and even better pancakes. I never paid this any notice, until one faithful day after my nightshift a co-worker (the lovely Tash) dragged me along to the whole in the wall bills in Darlinghurst.

From the street level it is beautiful with the original sandstone of the small corner townhouse being restored to its former glory in a way that fits perfectly with not only the streetscape but also the feeling of the restaurant.

As you enter, the interior has been designed to be warm and welcoming, with a minimalist style of off white wash walls and vibrant brown floors inviting you into the almost home style environment with a touch of class and silver service to finish it off. The service is second to none, with the wait staff being silver service trained but friendly, relaxed and just attentive enough to make sure your every whim is met!
As Tash and I walk in we were ushered to a table up the back near the window. We order our coffee, which turns out to be surprisingly good. I am a self-confessed addict and coffee-snob so for coffee to tickle my proverbial fancy you have to be doing something right! We order breakfast, I am told that I "simply must" try the scrambled eggs and I can't go past that (but have to get a side of bacon).
The Menu is very cleverly designed so you effectively design-your-own breakfast, choosing your eggs and then your desired sides, so you only get what you want and every element is perfect. With the recent resurgence in food culture in Sydney, restaurants (especially breakfast) need to ensure that every element of their meal are perfect. bills nails the brief! The scrambled eggs (a healthy 3 egg serve!) are delicious. They are creamy, smooth and perfectly seasoned. I have a sneaky suspicion that they must be cooked using a double boiler because it is the only way to get eggs that smooth and perfect.
Once we finish, Tash suggests we get some breakfast dessert and we opt for some delicious pancakes with maple syrup and ice cream. They are the perfect end to the meal. Little fluffy clouds, each bite makes me want to go back for more! I'm not a sweet breakfast person normally, but I'd happily have eaten another plate of these sweet sweet delicious!
The whole meal came to around $70, which for 2 breakfasts, breakfast dessert and 4 coffees is surprisingly reasonable! The perfect end to nightshift, I will certainly be fitting this into my nightshift routine! Thank you Tash!
