Do you hate doing the washing up after dinner with a multitude of pots and pans? Or despise stacking the dishwasher with a few pots and leaving no room for anything else? Me too! I am always on the lookout for tasty recipes which use just one singular pot so there is less to clean up - particularly on a busy weeknight.
I have gone through my recipe book and found these recipes, below, which are the one-pot recipes which I use the most. They are on high rotation during the cooler months when the family wants comfort food like soups, chilli and Butter Chicken! Do you have a favourite one-pot recipe that you cook all the time? Hearty Vegetable Soup
2 Tablespoons olive oil, 1 brown onion (chopped), 2 garlic cloves (crushed), 2 carrots (peeled and chopped), 2 sticks celery (sliced), 2 medium zucchini (sliced and quartered), 2 potatoes (peeled and chopped), 4 cups beef stock (salt reduced), 810g can whole tomatoes, 1/4 savoy cabbage (sliced and chopped) and 400g cannellini beans (drained and rinsed).
Heat oil in a large pot and sauté garlic and onions for 5 minutes, until soft. Add carrots, celery, zucchini and potatoes and cook for 5 minutes. Stir in stock and tomatoes and bring the mixture to the boil, stirring occasionally. Add cabbage and beans and simmer, stirring occasionally, for 1 hour. Season with pepper and serve with crusty bread.
Pork & Bean Chilli over Jacket Potatoes
1 onion (chopped), 2 garlic cloves (finely chopped), 1/2 teaspoon chilli powder (add more if you like it hotter), 1 teaspoon smoked paprika, 1 teaspoon cumin, 500g pork mince, 1 beef stock cube, 400g chopped tomatoes, 1 teaspoon sugar, 2 Tablespoons tomato paste, 410g can of kidney beans (rinsed and drained), 4 large white potatoes
In a large pot, add oil and cook the onion for 5 minutes until soft. Add garlic, chilli powder, smoked paprika and cumin. Stir for 5 minutes. Add mince and cook until brown. Dissolve the beef stock cube in 1 cup of boiling hot water and add to the pot. Also add in the tomatoes, sugar and tomato paste. Bring to the boil and simmer for 10 minutes. Taste and add more chilli if necessary. Season and allow the pot to sit for at least 10 minutes for the flavours to infuse. Meanwhile, place the white potatoes on a microwave-safe plate and prick each one with a fork several times. Microwave on high for 20 minutes for 4 potatoes. Serve the chilli over the top of the jacket potatoes. Top with sour cream and grated cheese, if desired. See

Pork & Bean Chilli
Butter Chicken
1 Tablespoon margarine or butter, 4 boneless chicken thighs (fat removed and cut into chunks), 1 Tablespoon whole cumin seeds, 2 garlic cloves (finely diced), 2 Tablespoons crushed ginger, 1 Tablespoon ground coriander seed, 1 teaspoon ground cardamom, 1/2 teaspoon allspice, 1/4 teaspoon mild chilli powder (use 1/2 tsp if you want it hotter), 1/3 cup tomato paste, 1.5 cups tomato puree, 80g pouch of Natural Greek Yoghurt, 1 cup lite thickened cream, 2 Tablespoons raw sugar
In a large pot, melt the butter on medium heat and add the chicken thigh chunks. Stir until cooked through and then remove the chicken, but leave as much as the butter in the pot as possible. Reduce the heat to low and then add the cumin seeds and stir for a minute until fragrant. Add the garlic and ginger and stir for another minute, then add the remaining spices and stir for another minute. Add the tomato paste and heat for 1 -2 minutes, to form the butter chicken paste. Place the chicken thigh chunks back into the pot and add the tomato puree, Greek yoghurt pouch, lite cooking cream and sugar. Simmer for 10 minutes until chicken is cooked and the sauce thickens a little. Allow to sit in the pot with the lid on for 10 minutes, to let the flavours combine. Serve over microwave rice. See
