If you love Thai flavours, then you will probably have a jar of red curry paste in your pantry or fridge. What do you like to make with it? I have two easy recipes which I make time and time again, as my family loves them and they are quick to make. We stopped eating meals with red curry paste for awhile, as we were trying to reduce our salt intake and red curry paste is very high in salt, but we missed the great flavour so we now eat it occasionally!

Thai Salmon Patties

1 sweet potato (peeled and chopped), 425g tin of salmon (drained and bones removed), 2 eggs (whisked), 2 teaspoons red curry paste, 1/3 cup breadcrumbs (plus extra to roll)

Combine all of the ingredients, then divide the mixture up into four patties. Roll them in extra breadcrumbs. Add oil to a medium fry pan and cook on each side for 4-5 minutes, until browned.

Pork & Pumpkin Red Curry

500g pork loin (chopped), 1 - 2 Tablespoons red curry paste (depending on heat preference), 420g tin coconut cream, 1/2 butternut pumpkin (cubed)

In a medium saucepan, add 1 tablespoon oil, pork and red curry paste. Cook for 5 minutes. Add coconut cream, pumpkin and 1/2 cup water. Boil and simmer for 30 - 40 minutes. The pumpkin softens and becomes the sauce, combined with the curry paste and coconut cream. The more you reduce the pumpkin mixture, the hotter the red curry flavour. Allow to sit for 10 minutes before serving, for the sauce to thicken.
