Do you have a favourite potato salad recipe, which you make for every BBQ, get-together, Christmas meal or family dinner? What do you like about it?
These two recipes below, are my "go-to" recipes, depending on how much time I have. I make Grandma's Classic Potato Salad for Christmas each year, and make my Weeknight Potato Salad recipe...as you guessed it, on busy weeknights! Neither of them takes long to put together and both of them disappear very quickly. Although these two are my favourites, I would still love to hear about your favourite potato salad recipe. 3 eggs, boiled for 10 minutes until hard-boiled 1/2 cup Heinz Salad Cream 2 tsp white vinegar 4 spring onions, sliced
Boil potatoes for 7-9 minutes until tender, but not soft. Drain and allow to cool. In a salad bowl, combine 1 boiled egg (sliced), salad cream and vinegar and blend until smooth. Add the cooled potatoes and 2 spring onions and then turn carefully to combine. Decorate with the remaining 2 boiled eggs (sliced) and spring onions.
Weeknight Potato Salad
500g baby potatoes, quartered 5 rashes of shortcut bacon, chopped
4 spring onions 1/2 cup mayonnaise
Boil potatoes for 7-9 minutes until tender, but not soft. Allow to cool. In a small saucepan, add oil and fry bacon until crispy. Allow to cool on a plate with paper towel. In a salad bowl, combine the potatoes, bacon, spring onions and mayonnaise. Stir carefully to combine.
