Lamingtons are certainly not hard to find in any Aussie city ahead of Australia Day, but finding a truly GOOD lamington, one worthy of buying in bulk, wrapping up in a big red & blue bow and taking to a BBQ can be a challenge.

What makes the perfect lamington? A spongy, light-as-air interior is mandatory, as is a thick mid-section of REAL, fresh cream and sweet fruity jam. The whole scrumptious package then needs to be sealed with a generous layer of chocolatey chocolate, before being liberally coated in shaved or shredded coconut. Desiccated is so 1980, darling.

Many and varied takes on the traditional lamington can be seen in the bakeries of Sydney, some of which are a revelation and some which would have been better left un-invented.

With Australia Day 2016 looming at the end of the month, this is my list of the best and fairest lamingtons in the Harbour City for you to snap up. Guaranteed to make you the most popular BBQ guest in Sydney, hands down.

1) Shepherd's Artisan Bakehouse
Castle Towers Shopping Centre, Westfield Eastgardens and assorted farmers markets.
These guys absolutely specialise in lamingtons. They make 5 different versions year round (there's a big clue there) and even created a special, gold limited edition one for Sydney Kids Hospital Gold Telethon in 2015. This January, they're pulling out all the stops with a shaved coconut encrusted uber-lamington, available only for the last 2 weeks of January. They even come in a cute 6-pack gift box!

2) Flour & Stone
53 Riley Street, Woolloomooloo
Go for the famous Panacotta Lamington, stay for just about everything else as well. Piled high with flaky coconut and featuring a delicious custardy centre, this is one to really savour.

3) Adriano Zumbo
Balmain, Rozelle, Waverly, Manly, Star Casino
His traditional lamingtons are (naturally) to die for, but if you really want to impress the guests at your Australia Day soiree, go for the salted caramel-filled lamingtons. Sweet but not too sweet with a light and moist cake base, they will have you licking the caramel off your fingers and going back for more every time.
