Comfortable food for the soul and the waistline
With the rains lashing and winds roaring once again; it's that time of the year when we all need some extra calm. Our answer is to dig in some comfort food. But piling in those extra pounds is anything but comfortable. So what's the best answer? A soothing bowl of quick and tasty tomato soup. Sure, you can easily get it off the shelf from any supermarket. However, our home made version is healthy and akin to a cozy blanket. Here's the secret.

Roughly cut a medium onion and two cloves of garlic.

Heat a table spoon of olive oil in a saucepan. Roast the onions and garlic till they are golden brown.

Add 400g peeled tinned tomatoes, one-cup of water and 100 ml of vegetable stock.

Let it cook for about 5-10 minutes. Take it out from heat and let it cool.

Blend the mixture in a blender. Make sure the consistency isn't too thin.Pour the mixture in a saucepan and again cook it for 10-15 minutes.

Final Result

Add salt to taste, a generous dash of pepper and some dry basil. Garnish it with some store bought croutons and finely grated cheddar cheese. Slurp!
