Dim sum, the bite-sized portions of Chinese cuisine, is an Aussie favourite, with shrimp dumplings, spring rolls, pork buns and congee devoured daily across the country. Australia conquered Cantonese cooking when William Wing Young, an Aussie chef, fried the world's first dim sim in the 1940s.

Begin your search for the crispiest, tastiest dim sim in Sydney with these choices:

Ho's Dim Sim Kitchen - 429 Pitt St, Sydney. Phone (02) 9281 2725

Open daily from 9am - 6pm for lunch or take away, Ho's variety of golden, crispy pockets of savoury goodness, packed with chicken or pork, cabbage, sesame oil and pepper, are only a few dollars each.

Fill your freezer with bulk buys, grabbing both dim sim flavours in frozen batches - 100 chicken dim sims are only 50c each. For the dim sim addict, grab bags of 240 at only 24c each for chicken and pork for 35c.

Hot tip for regulars - Ho's have a flair for frying spring rolls too.

During autumn, celebrate the Chinese lunar festival with a traditional delicacy - a freshly baked mooncake.

Visit the Ho's Dim Sim Kitchen website to browse the menu.

Hong Ha - Botany Road, Mascot

Before reading further, save time and join the long line of hungry diners. The secret of the best dim sims, Vietnamese rolls and pork rolls in Sydney has been exposed by the constant queue trailing along Botany Rd.

Lunchgoers watch as chefs prepare Vietnamese rolls, using freshly baked baguettes packed with chicken, cucumber, lettuce and coriander, finished with the distinctive fire of fresh chilli.

The dim sims, glistening with homemade goodness, are quickly gobbled, still sizzling from the fryer, before another batch is dipped into the sizzling oil for the next customer.

Teriyaki Boy - 481 Darling St, Balmain. Phone (02) 9555 6510

The best Japanese restaurant in the region is open for dinner and takeaway from Tuesday to Saturday.

While other restaurants focus on the traditional flavours of chicken or pork, Teriyaki Boy hosts a fish feast, with crab or prawn dim sims sold for only $4 each, either fried or steamed.

Settle in for a proper meal with the grilled salmon with miso-butter sauce and green salad or the sauteed beef slices with ginger. The teriyaki kingfish or tempura prawns are also crispy delights.

Visit the Teriyaki Boy website to browse the menu.

If visiting in the evenings, arrive before 6pm to avoid missing out on a takeaway of hot and crispy, authentic dim sims. If they sell out, don't despair - the pork buns and dumplings are almost as satisfying.
