Let's face it, sometimes no matter how much you love cooking, it can get a bit tedious. Sounds familiar? I've been there only too many times. My best bet on such days is this quick, less than 15 minute salad, which is filling and nutritious.

You will need a 400 gram of tinned mixed beans in water. Two or three spring onions, one medium tomato, salt, pepper, red chilli powder, juice of half a lemon, two teaspoons of olive oil and some finely chopped coriander.

Take out the beans and boil in fresh water for 5 minutes on medium heat. This is to remove its "tinned" taste.

Finely chop the spring onions and place it in a bowl. Add the beans to this bowl.

Chop the tomatoes and add to above mix. Add the lemon juice and olive olive and give it a good toss.

Next add the chilli powder, pepper and salt. Once again, give it a good toss.

Add the finely chopped coriander for garnishing.

You are now ready. Bring out the plates and spoons.

Yum! I think I would use it as a Taco filling.
