Let's face it, sometimes no matter how much you love cooking, it can get a bit tedious. Sounds familiar? I've been there only too many times. My best bet on such days is this quick, less than 15 minute salad, which is filling and nutritious.
You will need a 400 gram of tinned mixed beans in water. Two or three spring onions, one medium tomato, salt, pepper, red chilli powder, juice of half a lemon, two teaspoons of olive oil and some finely chopped coriander.
Take out the beans and boil in fresh water for 5 minutes on medium heat. This is to remove its "tinned" taste.
Finely chop the spring onions and place it in a bowl. Add the beans to this bowl.
