Stephen Daley has been a chef for over 20 years, working in hatted restaurants, cafes and French brasseries, learning the ropes in all sections of the kitchen and running many successful establishments. He has mentored many apprentices who have gone on to enjoy successful careers in the food industry. At Bay Cooking School he now offers the opportunity for anyone to learn from him, sharing tips and tricks that are used in professional kitchens and able to be recreated in your own.


Classes at Bay Cooking School are offered in an intimate setting and are focused on having fun, gaining confidence and enjoying the food you prepare. All classes are done step-by-step and are very easy to follow. Stephen demonstrates the preparation, explains the food science and works with his students as they make each element and put it all together to create a restaurant-worthy plate.

For our annual school reunion weekend away, ten of us took over Stephen's kitchen as we were taught how to create two impressive desserts - element by element. The menu was specifically designed by Stephen for our group and gave us the opportunity to learn how to prepare a number of different elements which could be used alone or combined. Working together under the patient guidance of Stephen and using fresh ingredients sourced from his own backyard, we transformed into competent apprentices, producing multiple elements of spiced syrup for poaching fruits, champagne sabayon, almond praline, basic sponge cake (Genoese), lemon curd and creme anglaise.


From these elements, we plated two restaurant-worthy desserts:
  • Spiced poached winter fruits and berries with a champagne sabayon gratin; and
  • Individual 'martini' citrus trifles, brandy cumquats and almond praline.

  • We sat down to enjoy the fruits of our labour with a soupçon of sparkling Moscato and reminisced on how proud our school home economics teacher would have been of our achievement!


    With a range of workshops spanning sweet, savoury and simply delicious, Bay Cooking School is not only a great activity to share with friends but also a great way to build confidence in the kitchen and joy in food preparation and plating.
