Sparkling river views, bright modern space, and refined foodie experience. Be witness to this waterside dining hub beside newly built Bennelong Bridge that will have you feeling like you've escaped the Sydney rush for a while…

We can thank Head Chef David Claesson from Glass at the Hilton for Bare Witness, opened only in May this year (2017). A fresh riverside space, it's perfect to slow down with a coffee and indulgent bite. Witness Claesson's philosophy being upheld: to tantalise taste buds with local, seasonal ingredients, barely tampered with.

Witness the open interior with modern décor, and impressive giant orchid flowers to admire in the foyer as you wait to be seated. The closer to the window overlooking the river, the better. Staff were prompt and attentive – a welcomed gesture, however, this put the pressure on to order. Challenging in the face of such a long list of all-day brekkie, and lunch bites.

Whether you're feeling something 'lighter' and full of plant-based goodness – like the Poke Bowl or Spiced Heirloom Cauliflower – or a stack of delicious grease, there's something for you on this menu. I have my eye on the Chicken & Waffles for next time. Ensuring maximal appetite for this glorious pile of Southern fried chicken, smoked bacon, candied pecans and apple slices.

This time I went with the Smavo but changed up this café essential by adding Bare Witness' black hollandaise sauce - something I was yet to witness on a menu. The flavour was, of all things, reminiscent of Kraft cheese. Try it for yourself and let me know if you agree/disagree. A unique flavour addition, and dark aesthetic, this contrasted the fresh green avo. Also the pops of colour from the egg, cherry tomatoes and radish slices. A delicious and more than filling dish.

My friend ordered the Wagyu Burger and, despite the struggle street to stomach it all, relished in the tasty goodness. The patty was sandwiched between tomato, lettuce, cheese, mayo sauce and soft buns. Some greasy slices of bacon added to the juicy flavour explosion - thin-cut fries on the side. And yes, meals here are Insta-worthy.

Bare Witness, also, to a nice list of hot and cold refreshments - black coffees including espresso and 'crazy uncle frankie's cold drip', sweet-tooth favourites Mocha and Chai Latte, yoghurt smoothies, and more. I ordered a smooth soy Matcha Latte - a growing favourite in the cafe world - that came with a little treat.

Bare Witness is part of The Connection, a shiny new complex in Rhodes with waterside entertainment including an interactive water instalment for kids - right beside the restaurant! Unable to resist immersing myself in the beautiful location, I went for a stroll over the bridge and along the riverside walkway toward the mangrove. Perfect to help settle your decadent meal while continuing to indulge in the leisure this area has to offer.
