Remember how grandma used to do it? How she would make something totally from scratch? How she would only purchase the freshest seasonal produce to include in her cooking? Have fond memories of the family enjoying life together in the kitchen and around the dinner table?

Well, that's what Back 2 Basics Traditions is all about. Created by Mark Bergineti and Rob Dimasi, they have a true passion to keep the Italian traditions alive amidst the challenges of this generation. Embracing these traditions and passing them on to future generations is the fundamental mission of Back 2 Basics Traditions. They share traditional cooking experiences, make premium artisan food products and hold unique food tours across Adelaide. I had the privilege of being invited to join them on the Suburban Adelaide Artisan Food Tour.

Our tour group consisted of nine eager participants ready to experience everything we could that morning. The tour went for approximately four hours and brought us to three locations to meet local artisan producers face-to-face. We got to learn how they make their products through behind-the-scenes sessions with the producers themselves. We also got to sample and purchase products if we wished.





Our first stop was Cirelli Coffee Roasting , where we were greeted with an authentic cup of coffee and a warm smile. Gianni Cirelli, a project manager, started roasting coffee in his garage as a hobby seven years ago. Today, he is still dedicated to crafting high-quality coffee and creating unique blends. He also specialises in cold brew coffee, which we had the chance to sample as well. He graciously guided us through the whole roasting process with full enthusiasm. Worthy of mention too is his mum's freshly-made zeppole, beautiful deep-fried dough balls coated in sugar and cinnamon. Definitely a must try when you're there.







Next we were off to Schinella's , to see firsthand the art of baking bread and Italian patisserie. Experienced pastry chefs Luca and Ricardo were very willing and open in sharing their knowledge with us. They demonstrated how they would make cannoli. And, of course, we were each given a cannoli to sample at the end. It was amazing, and I reckon this is the best cannoli I've had so far.







Then, to Ambra Liqueurs . Have you heard of the classic Italian limoncello? Made with freshly-picked lemons from the Adelaide Hills and Riverland regions, their authentic limoncello recipe was handed down from generation to generation. They have been manufacturing liqueurs since 1998. Their range also includes the agrumello, amaretto, chocolatino, cappuccino and tangelo.



The tour ended with a typical Italian shared lunch and sampling of Back 2 Basics Traditions food products. Overall I enjoyed myself very much. The tour was well organised, relevant and just the right length. Both Mark and Rob were friendly, accommodating, knowledgeable and great tour guides.
