After only four months since its opening, South Melbourne's micro-roaster, is certainly changing the way local Melburnians drink coffee.

Named after a wise old man who was attributed to assisting in the discovery of coffee, there's a lot to love about this new little hotspot. But Aucuba isn't your typical South Melbourne cafe with its smashed avo on toast fare. Oh no. This is one spot where the menu certainly has a flair for the unusual. And fresh. In fact, everything here is incredibly fresh. From the predominantly plant based, Japanese-inspired menu to the broad coffee menu where the beans are roasted on-site. Yep, pretty fresh.

Inside, it's ideally set out for those keen to get out of the office for a meeting or to work outside of home for a bit with a coffee better than anything you're going to make at home in hand. It's got its very own syphon bar that looks like a chemistry set you can't help but want to photograph. With its quirky pineapple wallpaper, it's bright and airy and come summer, it'll be buzzing, guaranteed (so get in now to check it out!)

While the menu is vegetarian, dedicated meat lovers can add on locally sourced proteins so they won't feel as though they've missed out, but honestly with a menu this interesting, you won't miss the bacon.

You'll find (roughly speaking) about 9-10 coffee brews on the menu at any one time varying from your typical milk coffees to filtered, cold drips, batch brews and everything in between from a variety of origins. And if there's anything you want to know about coffee, roasting or just trying to get a feel for what you might like, sort of like a sommelier, owner Mark Knapp will clue you into what you might be keen on.

The menu is seasonal and offers up some great breakfast and brunch items and if you like to keep it simple, you'll find a few basics and a cabinet with some pastries to accompany your coffee.

We tried the carrot and buttermilk waffle with gingerbread soil, yuzu activated goji berries, poached rhubarb and vanilla floss with smoked vanilla cream cheese ice cream and coconut and green tea sauce (above).

And if you're a fan of the smashed avo (or looking for something similar with a bit of a twist) try the crushed edamame, pea and labna on light rye (we had ours on gluten free toast) with a poached egg (or go one better with the popular panko crumbed egg) and yuzu kosho seasoning (below).

You'll find plenty more tasty curiosities like the breakfast ramen or the slightly more conventional mac and cheese toastie, but taking the chance on something a little different here pays off big time.
