A quick visit to
the food market in the city centre can be enough to inspire some cooking ideas. The range of vegetables, fruit and meat together with unbeatable prices and very friendly sellers are some of the reasons for visiting this popular site in Birmingham. As aubergines ( 3 for £1) are my ultimate find at the Bullring Market, I've decided to prepare this very popular dish.
Ingredients:
2 large aubergines
2 yellow peppers and 2 red peppers
Tomato sauce
1 pack of green lasagne sheets
125 gr of parmesan grated cheese
2 gloves of Garlic, 1onion, half spring onion, salt and pepper
Olive oil
Preparation:
Cut the aubergines and peppers in large chunks (about 1\2 cm thick) and place them into a roasting tray. Grease them with olive oil and season them with salt and pepper. Roast the aubergines and peppers for about 25 minutes in oven (200C).
Prepare the tomato sauce. In one a saucepan add the chopped onion together with crushed garlic and sliced spring onions. Cook it for about 5 minutes or until get softened. Add the tomato sauce (that can also be a homemade one).
Cook the sheets of lasagne until it's "al dente".
In a lasagne dish: put some tomato sauce, a layer of aubergines and peppers and a layer of lasagne sheets, repeating the process three times. Sprinkle the cheese on the top and bake it in the oven on (200C) for 35 minutes or until get golden.
