Ash & Elm, located in Intercontinental Hotel Singapore, offers European dining with a wood-fired oven, open charcoal-grill kitchen and charcuterie and cheese room. A must-try item on the grill menu is the 900 grams Tomahawk Steak at $160. This 300-day grain-fed Australian wagyu beef with a marbling score of 4 is large enough to be shared by 3 persons
If you're still wondering what's a Tomahawk Steak, it is actually a steak with a long bone that resembles a North American single-handed axe. This rib steak is cut from the fore-rib with the bone left on. The long bone is french-trimmed.
The steak was cooked to medium-rare perfection with charred bits at the edges. Each bite had the right amount of juiciness from rendered fat in the meat and soft fragrant flesh. The restaurant uses New Zealand Manuka woodchips in the grilling process to add robust flavors and natural caramelisation to the steak.
You'll just have to resist the temptation to grab the "shaft" and bite into the meat.
