Located on the rooftop of CapitaGreen, Artemis Grill is best known for its Mediterranean-styled and sustainable food accompanied by panoramic views of the Singapore CBD. Chef Fernando Arevalo and his kitchen served up black cod with grilled Japanese leeks, white chervil root purée and yuzu and pork broth.
The dish delivered a tasty marriage of complementary textures and flavours. The chervil root had a creamy buttery flavour and the wafer-thin purple Japanese potatoes and grilled leeks provided crunch. The star of the dish was the 'Legine Australe' which comes from extremely cold water in the Patagonian region and fished only 3 months a year. The delicately sweet and flaky fish was accentuated by the light tangy and rich broth.
