For me, every second Monday is baking Monday. My partner works FIFO (Fly in fly out) on an 8/6 roster. This means every second Monday morning he´ll be going away and every second Monday evening he´ll be coming home.

One of these coming home Mondays I decided to bake a cake, because let´s face it - men love cake. He was very happy and being a thoughtful girlfriend the next coming home Monday I made another cake. And that is how it started. I had dug myself a hole of cake expectations. Now I have to bake a cake every second Monday. But it´s alright, I also like cake.


Last Monday I made Apple Cake with Crumble.

Now this cake includes three steps. But don't be intimidated, it´s easy.

Ingredients:

Sponge cake
100 g butter
4 eggs
2 dl granulated sugar
2 teaspoons vanillin powder
2 teaspoons baking powder
3,5 dl white plain flour

Filling
4 apples
3 teaspoons cinnamon powder
3 tablespoons granulated sugar

Crumble cover
75 g butter
1 dl white plain flour
1 dl granulated sugar
2 dl oats
2 teaspoons vanillin powder
2 teaspoons grounded cardamom

What to do:
Before you start, line a 20 x 30 cm baking tray with baking paper and preheat the oven to 175° C.

I would then recommend to start with preparing the filling and the crumble cover, saving the sponge cake for last as it otherwise might start rising before you have time to get the cake into the oven.

Filling
Peel the apples and cut them into smaller pieces. Mix cinnamon and sugar, put the apple pieces into the mix and stir so that the mix attaches to the apple pieces.

Leave while you prepare the other stuff.

Crumble cover
Melt the butter. Mix the flour, sugar, oats, vanillin powder and cardamom with the melted butter, making it into a crumbly mixture.

Leave while you prepare the sponge cake.

Sponge cake
Melt the butter. Whisk the eggs, sugar, vanillin powder and baking powder to a light mixture using an electric beater.
Add the melted butter and the flour and quickly beat into a smooth mixture.

Pour the mixture into the baking tray.

Now everything is prepared.



Press the apple pieces into the sponge cake mixture.



Spread the crumble mixture over the sponge cake.



Bake in the lower part of the oven for about 35 minutes.

Enjoy with custard or ice cream.
