Treat yourself to tasty Anzac biscuits
ANZAC Day (25th April) is a nationwide day of commemoration for Australians and New Zealanders of the lives lost at war, especially the ANZACs (Australian and New Zealand Army Corp) of World War I.

The sweet ANZAC biscuits that we know and love today, originating from World War I, are in fact a derivative of the hard-tack soldier's biscuit that was consumed in the battlefields.

Easily made using rolled oats, flour, desiccated coconut, sugar, butter, golden syrup, baking soda and boiling water, Anzac biscuits are a delicious treat.

Try this easy recipe which takes only 10 minutes and makes 18 biscuits:

Chewy Anzac Biscuits:

Prehat oven to 160 degrees celcius.

Sift 1 cup plain flour in a bowl and then add 1 cup rolled oats, 1 cup desiccated coconut, and 3/4 cup brown sugar. Mix to combine.

On medium heat in a small saucepan, melt 125g butter, 2 tablespoons of water, and 2 tablespoons of golden syrup until melted. Take off the heat and add one teaspoon of bi-carb soda, and stir as the mixture froths.

Add the liquid mixture to the oat, coconut, flour and sugar mixture and combine well.

Line two trays with baking paper and then roll level tablespoons of the mixture on the trays, place 5cm apart and then flatten slightly.

Cook for 6-8 minutes until lightly golden on the outside and allow to cool.

Dissolve the bicarbonate in the boiled water first. Bake it longer (15-20 min)
This is the recipe I found in "The West" a few years ago and it works well.
