"It promotes West Australian produce and wines in an area that has come up in the world and is something we feel is local, a West Australian story that has very much become a Hyatt story as well," Mr Smith said.
"The menu for the dinner is all about locally sourced produce paying homage to the environment and the pairing of the foods with the wines."
Verity James will host the evening which will also feature music and the announcement of this year's award winning wines.
The menu has been created for the Wine Show of WA gala dinner by Hyatt Perth executive chef Abhay Kumar and will be served with 12 trophy wines chosen from the judging held earlier in October.
Guests will start the evening with a gold medal sparkling wine and and the best Sauvignon Blanc as a pre-dinner drink.
